Vanilla coconut and caramel sugar free peanut butter

Once you make this, you will never look at peanut butter the same way again!

I boosted the peanut butter with protein, prebiotic resistant starch, calcium, iodine, maca and more to ensure each spoonful is not only delicious, but that it packs a nutritional punch too!

Ingredients:

½ cup natural peanut butter*

1 tbsp softened coconut oil (odourless)

1 ½ level tbsp. IsoWhey maca, cacao and mesquite superfood mix

2 tsp Natvia (or sweetener of choice e.g. caramel or vanilla stevia drops)

1 tsp Natural Evolution Foods green banana resistant starch

2 tbsp dessciated coconut

1 tsp vanilla essence

1/2 tsp cinnamon (optional)

1 tbsp vanilla whey protein powder (optional booster) **

1 tsp green nutritionals calcium powder (optional booster)

*I used a lightly salted variety from Mayvers, if you use an unsalted version you may like to add a couple dashes of sea salt to the mix

**If you add the protein powder you may need slightly more coconut oil to keep the spread smooth and prevent it from clumping together.

 

Method:

Blend in a high speed blender, and you’re good to go!

I often have my vanilla, coconut and caramel peanut butter on top of a resistant starch rich pumpkin chai spiced protein muffin!
