Gut strengthening strawberry and cream soft serve June 11, 2016 recipes Gut strengthening strawberry and cream soft serve No added sugar strawberry and cream soft serve (made with cottage cheese) Hi everyone, For anyone that follows along my instagram, you will know that this recipe (or very similar) is a regular occurrence over at cafe TD! I make this for breakfast, or post a work-out, as it ticks all my nutritional boxes of being: High protein Low glycemic load Prebiotic resistant starch rich Probiotic rich No added sugar Calcium rich Antioxidant packed …and of course absolutely delicious! It is also super hydrating thanks to all the ice and water weight from the berries that are included too! You can also mix up the frozen fruit used and turn this into another variety such as a mango and cream soft serve which I also highly recommend! Mango and cream soft serve Strawberry and cream soft serve made without cottage cheese (instructions below) Gut strengthening strawberry and cream soft serve Ingredients 1 cup frozen berries* 5 ice cubes** 1/4 cup reduced fat cottage cheese*** 1 tbsp strawberry and cream protein powder**** 1 tsp green banana resistant starch 1/2 tsp vegan calcium powder 30mls natural kefir dash vanilla essence 1/4 cup water (or less) to help keep blender moving Optional: 1 tsp natvia (if you prefer a sweeter soft serve) 1 tsp berry superfood powder (e.g acai, maqui, goji etc.) Method: Blitz all ingredients in a high speed blender, spoon into serving glass, enjoy! Additional notes: * I like to mix it up between strawberries or raspberries, but you can use whichever frozen fruit, in whichever ratio, you prefer. **If you want to make a softer “soft-serve” stick with 5 ice cubes, if you want to make a more solid icy frozen dessert (image below) you can use up to double the ice i.e a whole ice tray. ***If you are lactose intolerant, the cottage cheese may upset your stomach (even though kefir is often well tolerated thanks to the partially digested lactose by the bacteria that are present). In this instance, you can omit the cottage cheese and add a full scoop of protein powder and a few more ice cubes. ****You can use a plain natural vanilla protein powder if you prefer / only have access to this. If you select to include the protein powder you likely won’t need the added sweetener at the end. More solid version using more ice and a berry superfood powder.
