No added sugar raw probiotic chocolate and peanut butter flan

Hi everyone,

As many of you know, I am a huge fan of kefir!

This is due to the abundance of variant probiotic strains it provides, as well as the ability of these strains to provide colony forming units which don’t merely pass through our gut, but rather latch on in order to work their magic.

In order to get maximum benefits from a few of the ingredients, including both the probiotics in the kefir, and the resistant starch in the green banana flour (which both can be sensitive to heat), I wanted to create a raw dessert.

To my surprise, this concoction actually came out well first go?!

You can modify the flavours to suit your preference (for example, you can switch the peanut butter for a different nut butter, or perhaps mix through some desiccated coconut and hemp seeds), but as a base, this totally works 🙂

No added sugar raw probiotic chocolate and peanut butter flan

Ingredients:

250g Babushka Kefir – kefir cheese

1 cup Babushka Kefir – natural kefir

1 tbsp Natural Evolution Food green banana resistant starch

1/2 cup cacao

60g naturally sweetened chocolate protein powder*

2 tbsp softened coconut oil

2 tbsp natural peanut butter (I use a lightly salted variety)

2 tbsp Natvia (or sweetener of choice)

1 tsp vanilla essence

Dash of salt

Method:

  1. Blend all ingredients
  2. Pour into one large or multiple individual serving bowls
  3. Place in freezer for approximately 3 hours
  4. Remove from freezer and let slightly soften before serving
  5. Enjoy on its own, or with some fresh berries!
