Hi everyone,

So as many of you have seen via social media I somehow ended up concocting the best brownies this morning without really trying. I have this issue that I can’t really follow recipes…I have no idea why, but something in me likes to just throw things together and see what comes out! Today, we had a success!

As per usual, I look to making high protein, high fibre, low GI options…and as per usual I avoid artificial ingredients.

Today I bring you my super moist high protein and high fibre, grain free chocolate and coconut brownies…enjoy!

Ingredients (you may want to double the mixture to make larger brownies as these were relatively thin):

  • 1 cup non fat plain Greek yoghurt (I used chobani)
  • 1 egg
  • 1/2 cup dutch cocoa powder (could use a mix of crio bru and plain dutch cocoa powder for a combined super healthy and rich flavour)
  • 1/2 cup natvia (I’m not a fan of adding sugar, but if you have a preference for sweetener, the ball is in your court!)
  • 2 heaped tablespoons coconut flour
  • 2 heaped tablespoons banaban dried coconut meat
  • 1 tsp vanilla essence
  • 1 tsp coconut essence
  • 1 tsp baking powder
  • 1/2 tsp baking soda

 

I literally wized everything in the thermomix, poured the mixture onto a baking tray lined with baking paper, and put in a preheated oven at 180 degrees celcius for 32 minutes. Done!

If you have some self control, let them cool a bit so they don’t completely fall apart (although they do taste rather delicious when they are hot…yes, I clearly didn’t have the self control and couldn’t resist waiting for them to cool!).

I think some people may want them a little drier and firmer, so perhaps add another tbsp of coconut flour..otherwise, enjoy!
