Hi everyone,

One of my go-to simple lunch time salads is this mouth watering, super simple, smokey bbq beetroot and spinach salad!

Its absolutely packed with antioxidants, vitamins and minerals, and is super friendly on the waistline.

As per usual, I wouldn’t eat it unless it tastes amazing!

Smokey bbq beetroot and spinach salad

Serves 1:

Salad ingredients:

1.5 cups fresh baby spinach leaves, rinsed and dried

1/2 packet Love Beets smokey BBQ shredded beets

1/2 medium cucumber, diced

1/4 medium red onion, finely diced

 

Optional extras:

1/4 red pepper, diced

5 baby tomatoes, sliced in half

1/4 avocado, sliced

 

Dressing:

2 x sprays with Spray EVOO (I use an organic one that is truffle infused)

1/2 lemon, squeezed over salad

salt and pepper to taste

 

Serving additions:

1 tbsp hemp seeds

 

Protein source – If having salad as a main dish:

Options:

120g-150g pan seared salmon or sliced chicken breast, or

2 poached eggs

 

To serve:

Mix all salad ingredients, top with dressing ingredients and mix thoroughly.

Sprinkle with hemp seeds

Top with protein source if consuming as a main meal
