Sugar free pancake syrup recipe

Hi everyone,

As those of you over on my Instagram will have seen, I often use a sugar free syrup over my high protein pancakes, waffles, and other sweet dishes.

This recipe came to inception when I was wanting to add a wet syrup to my pancakes one morning, but as usual, did not want to use any of the high sugar or artificially sweetened products, that are currently the options on the market.

With this came an idea to utilise my favourite prebiotic fibre liquid sweetener, VitaFiber, and create a salted almond, or a salted peanut butter, sugar free syrup. The result = a success!

As per usual, I wanted to find a way to boost the protein, prebiotic fibre and healthy fats in my dish, all whilst not adding in any artificial ingredients, or increasing the sugar.

For those of you in Australia and unable to access VitaFiber just yet (they promise me they are working on making this available this year!), perhaps you could try another natural sugar free liquid sweetener, such as allulose, which I believe can be ordered via online stores.

Sugar free syrup recipe – Salted peanut butter

 

Ingredients:

2/3 cup VitaFiber prebiotic fibre liquid sweetener

1 tbsp natural peanut butter (can substitute for whichever nut or seed butter you prefer)

1 tsp mesquite (I use one from MRM nutrition – this is an optional ingredient to bring out a caramel flavour for the recipe)

1 tsp vanilla protein powder – I use a natural vanilla whey from MRM nutrition (* you can just switch out for a dash of vanilla essence for a vegan alternative)

Dash of cinnamon

Dash of sea salt

 

Method:

  1. Blend all ingredients in a high speed blender
  2. Pour into container
  3. Use as you would maple syrup, pancake syrup, or any other liquid syrup on healthy pancakes, waffles, oats, or other dishes to your liking.

*Store in cupboard/pantry – out of direct sunlight, but not in the fridge.
